Since I have had my little girl, things have come out of my mouth that I swore would never come out. I have no idea where they come from. Some of them I heard when I was younger and some just come out. I do things that I promised myself that I would never do. For example, I have learned that mommy spit will wash anything off of a small face. I am sure if it were analyzed in some lab somewhere and replicated, it would be the most powerful cleaning agent ever. Chocolate milk mustache? No problem. Let me lick my thumb and stay right there!

Do we as moms share some kind of universal brain? Is that where these profound sayings come from?

I don't care who started it. I'm finishing it.

1....2....two and a half.... You don't want me to finish counting do you?

I'm so sorry you hurt your foot. I'll kiss it for you.

Here, let me get a tissue. BLOW!!!

Do you want this on the Dora plate or the Care bears? Or strawberry shortcake?

No, I understand that you are really really hungry. I can make you a sandwich, but you can not eat candy. (Where did my fun go?)

If you keep on, you'll have two time-outs.

You are the little girl and I'm the mommy. One day you'll be the mommy.

Because I'm the mommy, thats why.

Who is this "mommy" person and why do you keep saying her name?

LOA

Those of you that know me (or have eaten my food) know that I am not one to use a recipe. I found a great recipe using spinach and chicken. I really tried to follow it, but my tendencies to substitute and stray from the recipe always take over. This is my version and it tastes delicious.

I didn't combine the rice and spinach mixture until after I served dinner. It seems that the mixture was a bit salty (I added extra salt) and the plain rice needed some taste. As an afterthought, I combined the two and was impressed. The spinach mixture is very close to how I make my creamed spinach! My three-year-old even liked the "slimy green vegetable"!

  1c jasmine rice

  2c water

1 bag of spinach with carrot slices

  1 can creme of celery

  dash of pepper

  dash of nutmeg

  dash of salt

  butter

  1/2 chopped white onion

  3 chicken breasts

2 eggs beaten in a bowl

bread crumbs (I used 2 day old stuffing allowed to dry out in the oven while I cooked the chicken)

Take breasts and put in foil lined dish and cover. Seal ends of foil. Bake at 350 for 1 hour

Just as the chicken has almost finished in the oven, combine water and rice and prepare as directed. Take chicken out of oven and place in warm skillet with butter. Brown both sides of the chicken. Remove chicken from skillet. Using the same skillet, on med high, add butter and chopped onions and sautee for about 5 minutes. Add juice from baked chicken minus the fat. Set the chicken to the side. Add nutmeg, spinach, salt and pepper to the skillet. allow to cook until very thick (about 15 minutes) and stir frequently. Take chicken and dip in egg. Dip the chicken in the bread crumbs and place on foil lined dish (coat foil with butter). Place foil on top of dish. Put in oven to broil at 500 degrees. Keep stirring mixture! When mixture is thick, add cooked rice. Let the chicken broil for about 10 minutes. Take foil off of top of chicken and let broil for about 5 more minutes. Use your eyes, your nose, etc!

If things are looking a bit over-done, decrease heat or remove! I "eyeball" everything when I am cooking!

white chicken chili recipe

1/2 pound dried navy beans, picked over
1 large onion, chopped
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
3/4 cup chicken broth
2 cups half-and-half
1 teaspoon Tabasco, or to taste
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt, or to taste
1/2 teaspoon white pepper, or to taste
two 4-ounce cans whole mild green chilies, drained and chopped
5 boneless skinless chicken breast halves (about 2 pounds), cooked and cut into 1/2-inch pieces
1 1/2 cups grated Monterey Jack (about 6 ounces)
1/2 cup sour cream

  Garnish: fresh coriander sprigs
Accompaniment: tomato salsa

In a large kettle soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with cold water to cover by 2 inches. Cook beans at a bare simmer until tender, about 1 hour, and drain in colander.
In a skillet cook onion in 2 tablespoons butter over moderate heat until softened.

In a 6- to 8-quart heavy kettle melt remaining 6 tablespoons butter over moderately low heat and whisk in flour. Cook roux, whisking constantly, 3 minutes. Stir in onion and gradually add broth and half-and-half, whisking constantly. Bring mixture to a boil and simmer, stirring occasionally, 5 minutes, or until thickened. Stir in Tabasco, chili powder, cumin, salt, and white pepper. Add beans, chilies, chicken, and Monterey Jack and cook mixture over moderately low heat, stirring, 20 minutes. Stir sour cream into chili.

*I added about 1/3 cup dried rice to this recipe. I also added about a can of stewed tomatoes as well. The recipe was delicious and I am impressed with it! Of course I didn't follow it exactly (I never do) but the results were delicious. I'm thinking it could use some crawfish! Next time I make it, I'll put some in there. It tastes more like an etoufee than a chili!*

#6 on google. There was something very special about that class. It was a very spiritual and enlightning class for us all. Our instructor even commented on how unusual the class was. We all were able to learn from each other in different ways. Yesterday was a bit different. I was the only one there. My instructor and I really got an opportunity to really open up and talk. I really am blessed as I have thought the world of her since the first time we spoke! I finally took my test to be sent in to the national guild of hypnotists and it was easy (for me!). My Certificate should be here any time now! I have really taken to learning about hypnosis. I could easily never read a book on another subject and still be facinated about hypnosis and related subjects. I am so incredibly excited about it. I love it, I love it, I love it. I can only see myself expanding my knowledge and continuing my education. This is the first time I could ever see myself grow with a career. It dosen't seem like a job either. I have such a passion for it, such a love for it... It feels like a blessing to be able to perform hypnosis on someone. I get such great satisfaction out of helping someone. The other hypnotists that I have met are amazing people too. They are obviously people that "think outside of the box" like me and when I am around them I can feel their positive energy....

Last night when I got home I decided to do some research on the net so that I could blog about something and possibly learn something new. I am always looking for something new to learn about! I went on msn search for women and hypnosis and lo and behold! I was the top 2 spots. Me? I must have screamed loud enough for the neighborhood to hear me!!!!! I searched for hypnosis for women on google and found myself on the first page on the bottom and again on the second page. This is huge! I can feel the momentum gaining! I am forever grateful to Dave and Aaron (who I havn't met yet) for creating this spot. I've know Dave's wife for 10 years now. We have done everything together and people often thought we were twins or sisters! She married Dave seven (?) years ago. I digress....

So I have known them and been close to them as our lives have permitted. When you know someone you know them as your friends and you see them as just that. Last night was such an eye-opener for me. I know that Dave is technologically gifted (runs in his family too - I'm eyeing Hudson for that gene) and I guess I took that knowledge for granted or just knew but didn't look beyond that. I've always viewed him as Michelle's husband. Michelle told me about this site and it took a while but then I really got in to it. It is fun watching this site grow and take off. The potential for it is amazing. I see it grow and can't help but be happy for them!!!!

All of the excitement from yesterday really made me tired. When I woke up this morning I realized how wonderful life really is. I have my daughter (thats a looooooong story), I have a beautiful and amazing boyfriend, I have great friends and I love my "job". All I could think about when I woke up this morning was how wonderful life is and how happy I am.

My Hypnosis Class

Today was my final class for hypnosis. Actually I didn't learn anything at all - I just took my test and had a wonderful conversation with my teacher. The class was really small and personal. I enjoyed it a great deal. I have been fortunate enough to have several friends volunteer to be hypnotized and have had several clients. I really love my new profession and have a strong passion for it.

I am looking forward to a happy life practicing hypnosis! While there seems to be much comparison between Myspace and InstantSpot it is a matter that really needs no debate. The differences between both sites are big and it is like comparing something very basic and cheap (like McDonalds) to something of known quality and product (like Bob's). With myspace you get a premade layout with little customization. There are some really cute fillers too - and its great for kids in H.S. or just to catch up with some from H.S. InstantSpot is much more grown up, sophisticated, and a Godsend for those wanting to start our businesses. I know from experience (I've been showing my site off) that it is professional and everyone that has visited my site (hypnosis.instantspot.com) is impressed. Last night I had a conversation with a friend and fellow hypnotist of mine about instantspot and how well we believe it will do. Myspace is what the kids are doing today, they lose interest easily and move on. The demographics for InstantSpot are a bit different. This appeals to the more mature audience. Who cares about free greenday tickets? I don't. I don't care about the latest hip-hop act or boy band or crazy dumb stunt recorded on tape. I am just too old for that kind of stuff (I can't believe those words just flew from my hands :) Most of us that are out of H.S. (and can't remember much from when we got out either) don't have a lot of time to keep up with the current trend. We tend to find something of quality and stick with it. That creates longevity for a product life.

Back to the McDonalds and Bob's analogy (sp?) One could at first assume that since both sell beef they must be the same. One step in both of them makes it clear that they are very very very different. One is cheap, fast and great if you like your burger very thin with mayo and ketchup. One is world-known for their superior quality of steaks along with award winning side dishes. The people both attract, the environment, the employees - everything is different.

After the launch of Myspace, everyone seemed to be jumping in on the bandwagon and making copy-cat products. Yahoo 360 is a great example. I think everyone can remember paying for e-mail. Now in an age of Hotmail, Gmail and Yahoo no one will pay for e-mail anymore. I've been online and found blogging sites that charge - Instantspot is pioneering the way for those sites to become extinct.

I knew (and still know) a kid my age back in high school. He went to a small town school like me, just a plain countryboy. His uncle was somewhat poor and spent all of his time working on his computer and some crazy site in the mid-ninties. One day my friend looked out the window to see a big Mercedes rolling up the driveway. It was my friend's uncle. He had just sold his half of his company to his business partner, Marc Cuban. That company was broadcast.com. Do I even have to expalin Mark Cuban to anyone?!? I see the same future for InstantSpot.

Congratulations to Dave and Aaron for creating their own site in a class by itself. It is just a matter of time before this site is HUGE and everyone else is trying to be like it.

I will be licensed soon

Here it is, the beginning of October. I have roughly a month left before I can officially charge for hypnosis. I am needing my friends and family to be "guinea pigs" so that I may practice and earn hours towards my certification. I have learned many wonderful things about the human mind, how it works, etc... This is going to be a wonderful journey for myself. I can only pray that I can help as many people as I can. I am starting this business journey not as a means for profit, but as a way to grow spiritually. This has nothing to do with money. I know that with Karmic Law, I will be blessed beyond comprehension as long as I don't lose focus and perspective on why I chose this profession. The money will follow. I am planning on working out of the home to close friends and their friends. Only people with a personal reference from someone I know will be allowed in to my house! Otherwise, I am planning on setting up a business in Sherman for a while.
