"mommy"isms
Since I have had my little girl, things have come out of my mouth that I swore would never come out. I have no idea where they come from. Some of them I heard when I was younger and some just come out. I do things that I promised myself that I would never do. For example, I have learned that mommy spit will wash anything off of a small face. I am sure if it were analyzed in some lab somewhere and replicated, it would be the most powerful cleaning agent ever. Chocolate milk mustache? No problem. Let me lick my thumb and stay right there!
Do we as moms share some kind of universal brain? Is that where these profound sayings come from?
I don't care who started it. I'm finishing it.

My Version of the Chicken and Spinach
RecipesThose of you that know me (or have eaten my food) know that I am not one to use a recipe. I found a great recipe using spinach and chicken. I really tried to follow it, but my tendencies to substitute and stray from the recipe always take over. This is my version and it tastes delicious.
I didn't combine the rice and spinach mixture until after I served dinner. It seems that the mixture was a bit salty (I added extra salt) and the plain rice needed some taste. As an afterthought, I combined the two and was impressed. The spinach mixture is very close to how I make my creamed spinach! My three-year-old even liked the "slimy green vegetable"!
1c jasmine rice
2c water
1 bag of spinach with carrot slices
1 can creme of celery
dash of pepper
dash of nutmeg
dash of salt
butter
1/2 chopped white onion
3 chicken breasts
2 eggs beaten in a bowl
bread crumbs (I used 2 day old stuffing allowed to dry out in the oven while I cooked the chicken)
Take breasts and put in foil lined dish and cover. Seal ends of foil. Bake at 350 for 1 hour
Just as the chicken has almost finished in the oven, combine water and rice and prepare as directed. Take chicken out of oven and place in warm skillet with butter. Brown both sides of the chicken. Remove chicken from skillet. Using the same skillet, on med high, add butter and chopped onions and sautee for about 5 minutes. Add juice from baked chicken minus the fat. Set the chicken to the side. Add nutmeg, spinach, salt and pepper to the skillet. allow to cook until very thick (about 15 minutes) and stir frequently. Take chicken and dip in egg. Dip the chicken in the bread crumbs and place on foil lined dish (coat foil with butter). Place foil on top of dish. Put in oven to broil at 500 degrees. Keep stirring mixture! When mixture is thick, add cooked rice. Let the chicken broil for about 10 minutes. Take foil off of top of chicken and let broil for about 5 more minutes. Use your eyes, your nose, etc!
If things are looking a bit over-done, decrease heat or remove! I "eyeball" everything when I am cooking!
white chicken chili recipe
1 large onion, chopped
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
3/4 cup chicken broth
2 cups half-and-half
1 teaspoon Tabasco, or to taste
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt, or to taste
1/2 teaspoon white pepper, or to taste
two 4-ounce cans whole mild green chilies, drained and chopped
5 boneless skinless chicken breast halves (about 2 pounds), cooked and cut into 1/2-inch pieces
1 1/2 cups grated Monterey Jack (about 6 ounces)
1/2 cup sour cream
Garnish: fresh coriander sprigs
Accompaniment: tomato salsa
In a skillet cook onion in 2 tablespoons butter over moderate heat until softened.
In a 6- to 8-quart heavy kettle melt remaining 6 tablespoons butter over moderately low heat and whisk in flour. Cook roux, whisking constantly, 3 minutes. Stir in onion and gradually add broth and half-and-half, whisking constantly. Bring mixture to a boil and simmer, stirring occasionally, 5 minutes, or until thickened. Stir in Tabasco, chili powder, cumin, salt, and white pepper. Add beans, chilies, chicken, and Monterey Jack and cook mixture over moderately low heat, stirring, 20 minutes. Stir sour cream into chili.
*I added about 1/3 cup dried rice to this recipe. I also added about a can of stewed tomatoes as well. The recipe was delicious and I am impressed with it! Of course I didn't follow it exactly (I never do) but the results were delicious. I'm thinking it could use some crawfish! Next time I make it, I'll put some in there. It tastes more like an etoufee than a chili!*

I watched Flip Orley perform stage hypnosis last night. I enjoyed it enough to consider learning about that aspect of hypnotism!
